Grilled Vegetables and Brown Rice

Drizzle olive oil and freshly crushed garlic on sliced peppers, eggplant, zucchini and mushrooms. Place in tin pan and broil for five minutes or until vegetables are slightly charred. Remove vegetables from the oven. Prepare brown rice according to directions. Serve vegetables on top of brown rice and accompany with a dash of low sodium soy sauce if desired.

Prepare one cup of vegetarian broth. Add 1 large can of crushed tomatoes, 1 teaspoon of crushed red peppers, 2 crushed garlic cloves, and three leaves of fresh chopped basil. Add half cup of cubed tofu to the sauce. Simmer until hot. Prepare whole wheat pasta according to box. Pour sauce over pasta.
